In 2020, MIR Italia expanded its fermentation portfolio with the introduction of MIR PLB, a freeze‑dried starter culture specifically engineered for plant‑based substrates, including soy, nut‑derived and cereal matrices.

 

The formulation combines selected Streptococcus thermophilus and Lactobacillus bulgaricus strains, optimized for controlled acidification kinetics, consistent texture formation and clean flavour development in plant‑based yogurt, fermented beverages and cheese analogues.

 

To address contamination risks associated with heterofermentative microorganisms in non‑dairy processes, MIR Italia simultaneously released BIOPRO VLC, a Lactobacillus rhamnosus strain with proven efficacy in improving microbiological stability and maintaining fermentation performance across diverse plant‑based media.

 

These developments positioned MIR Italia among the early industrial suppliers of dedicated fermentation systems for plant‑based dairy alternatives, providing reliable tools for process standardization and quality control.
